Butcher's Tip

Season generously with salt, herbs and add butter/oil to the skin as required.  Cover with foil and Cook in the oven at 190 degrees C or Gas Mark 5 for 20 minutes then reduce the temperature to 180 degrees C or Gas Mark 4 for 1 hour 20 minutes (for a 1.5kg Chicken).  Leave to rest for 15-20 minutes before carving.
